Carciofi Ripieni is Italian for stuffed artichokes. A common Italian favorite that uses a mixture of bread crumbs, garlic, oregano, and other cheeses and spices. The stuffing is pushed into the spaces of each leaf before it is boiled or steamed. Enjoy!
4 Tbsp 100% Organic Extra virgin Olive oil
120 g/ 5 oz of breadcrumbs
50 g/ 2 oz of grated pecorino
50 g/ 2 oz of grated Parmigiano
Salt, to taste
Black pepper, to taste
1 ½ clove of garlic finelly chopped
Clean the artichokes by removing the outer leaves and internal heart.
Put the artichokes in a bowl with cold water. Add the juice of half a lemon then rinse and drain.
In a bowl mix the breadcrumbs, parsley, garlic, pecorino, parmigiano, salt and black pepper then add extra virgin olive oil.
Fill the artichokes, spreading leaves. Place the artichokes in a baking dish and cook for 15 min then move the pan 5 min on the grill in a preheated oven at 220°C/ 450°F
