Italian Oil Cookies
Makes approximately 12 dozen
Preheat oven to 400 degrees - Sprayed cookie sheets
Bake 5 minutes or until bottom is lightly browned
Place on wax paper to cool
Juice of 1 orange
Juice of 1 lemon
1 cup oil
6 cups sugar
In separate bowl, sift together:
5 cups flour
8 tsp baking powder
In a mixer mix together the wet & dry ingredients...keep adding additional cups, 1 cup at a time, of flour until the dough is like
a play dough consistency....approximately 4-5 cups more, will still be slightly sticky but able to be rolled into balls easily.
Roll out quarter sized balls out of the entire dough.
Each ball can be rolled and shaped like play dough, making shapes like "S's", bows, etc.
Place each shaped cookie onto the sprayed cookie sheet, usually about a dozen a sheet, bake 5 minutes, until bottom is lightly browned...transfer to wax paper to dry. Once they are cooled they can be glazed and decorated with colored sugar sprinkles.
In a large mixing bowl add 1 pound of powdered sugar, and add small amounts of water, a little at a time, to make a thin glaze.
Transfer hand fulls of cooled cookies into the glaze bowl, glaze all sides of cookies with your hand (so you don't break them with a spoon) and place back onto the waxed paper. Another person can sprinkle with the colored sugar sprinkles before the glaze dries.
